How To Make Low-fat Spanish Omelette

- 8 egg whites
- 4 eggs
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 zucchini, thinly sliced
- 1 cup spinach
- 1 tsp olive oil
- Salt and pepper to taste
Instructions

Preheat a non-stick skillet over medium heat and add olive oil.

Add onion, red bell pepper, green bell pepper, zucchini, and spinach to the skillet. Sauté until the vegetables are tender.

In a separate bowl, whisk together egg whites, eggs, salt, and pepper.

Pour the egg mixture over the sautéed vegetables in the skillet.

Cook for about 5 minutes until the edges are set.

Carefully flip the omelette and cook for an additional 5 minutes until the center is set.
