Ingredients

  • 8 egg whites
  • 4 eggs
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 cup spinach
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat a non-stick skillet over medium heat and add olive oil.

  2. Add onion, red bell pepper, green bell pepper, zucchini, and spinach to the skillet. Sauté until the vegetables are tender.

  3. In a separate bowl, whisk together egg whites, eggs, salt, and pepper.

  4. Pour the egg mixture over the sautéed vegetables in the skillet.

  5. Cook for about 5 minutes until the edges are set.

  6. Carefully flip the omelette and cook for an additional 5 minutes until the center is set.

  7. Remove from heat and let it cool for a few minutes before serving.
