Ingredients

  • 2.5 lbs beef joint
  • 1 onion, sliced
  • 2 carrots, diced
  • 2 cloves of garlic, minced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Season the beef joint with salt and pepper.

  2. Place the sliced onions, diced carrots, and minced garlic at the bottom of the slow cooker.

  3. Place the seasoned beef joint on top of the vegetables.

  4. Pour beef broth and Worcestershire sauce over the beef.

  5. Sprinkle dried thyme over the beef.

  6. Cover the slow cooker and cook on low heat for 6 hours.

  7. Once cooked, remove the beef from the slow cooker and let it rest for 10 minutes before slicing.

  8. Serve the sliced beef with the cooked vegetables and juices from the slow cooker.
