Ingredients
- 8 oz beef sausage, crumbled
- 2 cups fresh spinach leaves
- 8 eggs
- 1/4 cup milk
- 1/4 cup grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil

Preheat oven to 375°F.

Heat olive oil in a 10-inch oven-safe skillet over medium heat. Add beef sausage and cook until browned, stirring occasionally.

Add spinach leaves to the skillet and cook until wilted.

In a medium bowl, whisk together the eggs, milk, Parmesan cheese, salt, and black pepper.

Pour the egg mixture into the skillet and stir to combine with the sausage and spinach.

Transfer the skillet to the oven and bake for 15-20 minutes or until the frittata is set.
