Ingredients

  • 2 cups pumpkin puree
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cup milk
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, combine pumpkin puree, flour, sugar, baking powder, cinnamon, nutmeg, and salt.

  2. In a separate bowl, whisk together eggs and milk. Gradually add the egg mixture to the pumpkin mixture, stirring until well combined.

  3. Heat vegetable oil in a deep frying pan over medium heat.

  4. Drop spoonfuls of the pumpkin batter into the hot oil and fry until golden brown on both sides, about 2-3 minutes per side.

  5. Remove the fritters from the oil and drain on a paper towel-lined plate.

  6. Dust the fritters with powdered sugar before serving.
