Ingredients
- 1 lb Mexican chorizo sausage, casing removed
- 2 tbsp vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 potatoes, peeled and diced
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Heat the vegetable oil in a large skillet over medium heat. Add the chorizo sausage and cook until browned and crispy, breaking it up into smaller pieces with a spatula.

Remove the chorizo from the skillet and set aside. In the same skillet, add the onion and garlic and sauté until softened.

Add the diced potatoes to the skillet and cook until they are tender and slightly crispy, stirring occasionally.

Return the chorizo to the skillet and mix well with the potatoes. Season with paprika, cumin, salt, and pepper.

Cook for an additional 5 minutes, allowing the flavors to blend together.
