  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 375°F (190°C).

  2. In a large bowl, cream together butter, peanut butter, granulated sugar and brown sugar until light and fluffy.

  3. Beat in egg and vanilla extract.

  4. In a separate bowl, whisk together flour, baking soda, and salt.

  5. Gradually mix dry ingredients into wet ingredients until well combined.

  6. Roll the dough into tablespoon-sized balls and place them on a baking sheet lined with parchment paper.

  7. Use a fork to flatten each ball, making a crisscross pattern.

  8. Bake for 10 minutes or until lightly browned.

  9. Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack to cool completely.
