  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 12 miniature peanut butter cups, unwrapped

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until smooth.

  3. Beat in egg until well blended.

  4. In a separate bowl, combine flour, baking soda, and salt. Gradually add dry ingredients to the peanut butter mixture and mix well.

  5. Shape dough into 1-inch balls and place on ungreased baking sheets.

  6. Bake for 8-10 minutes or until lightly golden brown.

  7. Remove from oven and immediately press a peanut butter cup into the center of each cookie.

  8. Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
