  • 1/2 cup unsalted butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a mixing bowl, cream together the softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.

  3. Beat in the egg and vanilla extract until well combined.

  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

  5. Roll the dough into 1-inch balls and place them on the prepared baking sheet.

  6. Use a fork to flatten each ball slightly, creating a crisscross pattern on the top.

  7. Bake for 10-12 minutes, or until the edges are golden brown.

  8. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
