How To Make Chocolate Peanut Butter Shortbread Sandwiches

- 1 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1/4 cup creamy peanut butter
- 1/4 cup powdered sugar (for dusting)
Instructions

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium bowl, whisk together the flour, cocoa powder, and powdered sugar.

Add the softened butter and peanut butter to the dry ingredients, and mix until a dough forms.

Roll out the dough on a lightly floured surface to about 1/4 inch thickness. Use a cookie cutter to cut out shapes.

Place the cut-out cookies on the prepared baking sheet and bake for 10 minutes, or until firm to the touch.

Remove from the oven and let the cookies cool completely.

Spread a dollop of peanut butter on half of the cookies, then top with another cookie to create a sandwich.
