Goat Cheese Fritters Recipe

 

Serve a fresh batch of goat cheese fritters for a finger-licking snack! The cheese balls are fried and served with a side of guava dip.

Ingredients

For Cheese Fritters:

  • 14 oz goat cheese
  • 4 oz cream cheese, softened
  • 16 oz whole milk ricotta cheese
  • 2 large eggs
  • 2 tbsp all-purpose flour
  • 3 medium green onions
  • ¼ tsp salt, or to taste
  • ¼ tsp freshly ground black pepper, or to taste
  • cup fine breadcrumbs
  • 1 qt vegetable oil, for frying

For Guava Dipping Sauce:

  • cup guava paste
  • 3 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 2 tbsp sugar
  • ½ cup mango juice or pineapple juice, canned or fresh
  • cooked bacon, crumbled
  • blue cheese, crumbled
  • manchego cheese, grated
  • sun-dried tomatoes, finely chopped
  • green or black olives, finely chopped, optional

Instructions

Dipping sauce:

  1. Place the guava paste in a small saucepan.
  2. Add the remaining ingredients (vinegar, soy sauce, sugar, and juice) and whisk together over low heat until the guava paste has completely melted. Remove from heat and set aside.

Cheese fritters:

  1. Coarsely chop the green onions and place them in the bowl of a food processor. Pulse a couple of times for a few seconds each time, until the onions are more finely chopped.
  2. Add the goat cheese, the softened cream cheese, and the ricotta cheese to the food processor bowl.
  3. Add 2 eggs and the flour and process the mixture until it is well mixed. Add salt and pepper to taste, and pulse to mix.
  4. If desired, add one or more optional ingredients to the cheese mixture at this point, such as crumbled cooked bacon, crumbled blue cheese, grated manchego cheese, finely chopped sun-dried tomatoes, finely chopped olives, etc.
  5. Chill the cheese mixture for at least an hour.
  6. Once the cheese mixture is cold, shape the mixture into 1-inch diameter balls. Roll each ball in the breadcrumbs and thoroughly coat the cheese with the crumbs.
  7. Place the cheese balls on a baking sheet and keep them chilled until you are ready to fry them.
  8. Heat 2 inches of vegetable oil in a deep skillet or saucepan to 350 F. Fry the cheese balls, in batches, until they are very golden brown.
  9. Carefully remove them from the oil with a slotted spoon and place them on a plate lined with paper towels. Serve cheese fritters warm, with the dipping sauce.
  10. If you are not going to serve the fried fritters right away, keep them warm in a 200 F oven until ready to serve.
