  • 1 refrigerated pie crust
  • 4 oz goat cheese, softened
  • 1 green bell pepper, sliced thinly
  • 2 eggs
  • 1/2 cup milk
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F.

  2. Place pie crust in a 9-inch tart pan and press down to form the crust. Refrigerate for 10 minutes.

  3. In a small bowl, whisk together the goat cheese, eggs, milk, salt, and black pepper until well combined.

  4. Pour the goat cheese mixture into the chilled crust.

  5. Arrange the sliced green bell peppers on top of the goat cheese mixture.

  6. Bake for 30 minutes or until the tart is golden brown and the filling is set.

  7. Let cool for 10 minutes before slicing and serving.
