How To Make Easy Squash Fritters

Ingredients
- 2 cups grated squash
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 eggs
- 2 tbsp vegetable oil for frying
Instructions

In a bowl, combine grated squash, flour, Parmesan cheese, garlic, parsley, salt, and black pepper.

Beat the eggs in a separate bowl, then add them to the squash mixture. Stir well to combine.

Heat vegetable oil in a skillet over medium heat.

Drop spoonfuls of the squash mixture into the hot oil, then flatten them slightly with the back of the spoon.

Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.

Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.
