Ingredients

  • 2 cups grated squash
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 eggs
  • 2 tbsp vegetable oil for frying

Instructions

  1. In a bowl, combine grated squash, flour, Parmesan cheese, garlic, parsley, salt, and black pepper.

  2. Beat the eggs in a separate bowl, then add them to the squash mixture. Stir well to combine.

  3. Heat vegetable oil in a skillet over medium heat.

  4. Drop spoonfuls of the squash mixture into the hot oil, then flatten them slightly with the back of the spoon.

  5. Cook the fritters for about 3-4 minutes on each side, or until golden brown and crispy.

  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to drain excess oil.

  7. Serve the squash fritters hot, with your favorite dipping sauce.
