Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 jalapeno pepper, seeded and minced
- 1 can (14 oz) diced tomatoes
- 2 cans (15 oz) black beans, rinsed and drained
- 1 cup vegetable broth
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp oregano
- Salt and pepper, to taste
- Optional toppings: shredded cheese, sour cream, chopped cilantro
Instructions

In a large pot, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes.

Add minced garlic, diced bell pepper, and minced jalapeno pepper to the pot. Cook for another 3 minutes.

Stir in the diced tomatoes, black beans, vegetable broth, chili powder, cumin, paprika, oregano, salt, and pepper.

Bring the chili to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.

Serve the black bean chili hot, topped with shredded cheese, sour cream, and chopped cilantro if desired.
