Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/4 cup molasses
  • 1/4 cup milk
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • 1/2 tsp baking soda
  • 1/4 cup chopped candied ginger
  • 1/2 cup mixed dried fruits (such as raisins, currants, and chopped dates)
  • 1/4 cup chopped nuts (such as walnuts or almonds)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 6-inch round cake pan with parchment paper.

  2. In a large bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the molasses and milk.

  3. In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, ground cloves, ground nutmeg, and baking soda. Gradually add the dry ingredients to the wet ingredients and mix until just combined.

  4. Fold in the chopped candied ginger, mixed dried fruits, and chopped nuts.

  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 1 hour 30 minutes, or until a toothpick inserted into the center comes out clean.

  6. Remove from the oven and let the cake cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

  7. Serve the gingered rich fruit cake as is or with a dusting of powdered sugar. Enjoy!
