  • 2 cups heavy cream
  • 1 tablespoon lemon juice

Instructions

  1. In a saucepan, heat the heavy cream over low heat until it reaches a temperature of 180°F (82°C).

  2. Remove from heat and stir in the lemon juice. Let it sit at room temperature for 5 minutes.

  3. Line a sieve or strainer with cheesecloth and place it over a bowl. Pour the mixture into the sieve, allowing the liquid to drain.

  4. Cover the sieve and refrigerate for at least 8-12 hours, or overnight.

  5. Once fully drained and chilled, transfer the mascarpone cheese to an airtight container and refrigerate until ready to use.
