Ingredients

  • 1 pound venison stew meat
  • 1 large onion, chopped
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 4 cups beef or venison broth
  • 1 cup red wine
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the venison and cook until browned on all sides.

  2. Add the onion, carrots, celery, and garlic. Cook for 5 minutes until the vegetables are slightly softened.

  3. Add the bay leaves, broth, wine, tomato paste, Worcestershire sauce, thyme, and salt and pepper.

  4. Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 2-3 hours or until the venison is tender.

  5. Serve the stew hot with crusty bread.
