Ingredients

  • 1.5 lbs (680g) venison stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 sprig fresh thyme
  • 2 bay leaves
  • 4 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 1 cup frozen peas

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the venison and cook until browned on all sides. Remove from the pot and set aside.

  2. In the same pot, add the onion, carrots, celery, garlic, thyme, and bay leaves. Cook until the vegetables start to soften, about 5 minutes.

  3. Return the venison to the pot and add the beef broth, red wine, tomato paste, Worcestershire sauce, salt, and pepper. Bring to a boil, then reduce heat to low and simmer for 2 hours.

  4. Add the frozen peas and cook for an additional 30 minutes.

  5. Serve hot and enjoy!
