  • 1 whole chicken, about 3-4 pounds
  • 8 cups chicken broth
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 2-inch piece of ginger, sliced
  • 2 cinnamon sticks
  • 4 star anise
  • 3 cardamom pods
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • Salt, to taste
  • Rice noodles, for serving
  • Bean sprouts, for garnish
  • Fresh herbs (cilantro, Thai basil), for garnish
  • Lime wedges, for serving
  • Sriracha or hoisin sauce, for serving

Instructions

  1. In a large pot, add the chicken broth, onion, garlic, ginger, cinnamon sticks, star anise, and cardamom pods. Bring to a boil.

  2. Add the whole chicken to the pot and reduce the heat to low. Simmer for 1.5-2 hours, until the chicken is cooked through and tender.

  3. Remove the chicken from the pot and let it cool slightly. Shred the chicken into bite-sized pieces.

  4. Strain the broth through a fine-mesh sieve to remove any solids.

  5. Return the broth to the pot and season with fish sauce, sugar, and salt to taste.

  6. Bring the broth back to a simmer and add the rice noodles. Cook according to package instructions.

  7. Divide the cooked noodles among four bowls. Top with the shredded chicken.

  8. Ladle the hot broth over the noodles and chicken.

  9. Serve the pho ga soup with bean sprouts, fresh herbs, lime wedges, and sriracha or hoisin sauce on the side.
