Ingredients

  • 8 cups rocket leaves
  • 2 lemons
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

  1. Preheat a grill or stovetop grill pan.

  2. Slice the lemons in half and brush the cut side with a little olive oil.

  3. Place the lemons cut side down on the grill and cook for 2-3 minutes until charred.

  4. Remove the lemons from the grill and squeeze out the juice into a bowl.

  5. Whisk in the remaining olive oil, honey, salt, and pepper to create the dressing.

  6. In a large bowl, combine the rocket leaves and drizzle with the charred lemon dressing.

  7. Toss gently to coat the leaves evenly.

  8. Serve the rocket salad immediately.
