How To Make Rocket with Charred Lemon Dressing

Ingredients
- 8 cups rocket leaves
- 2 lemons
- 2 tablespoons olive oil
- 1 teaspoon honey
- Salt and pepper to taste
Instructions

Preheat a grill or stovetop grill pan.

Slice the lemons in half and brush the cut side with a little olive oil.

Place the lemons cut side down on the grill and cook for 2-3 minutes until charred.

Remove the lemons from the grill and squeeze out the juice into a bowl.

Whisk in the remaining olive oil, honey, salt, and pepper to create the dressing.

In a large bowl, combine the rocket leaves and drizzle with the charred lemon dressing.
