Ingredients

  • 2 red bell peppers, diced
  • 2 jalapeno peppers, diced
  • 2 poblano peppers, diced
  • 1 chipotle pepper in adobo sauce, minced
  • 1 small red onion, diced
  • 2 cloves of garlic, minced
  • 1 lime, juiced
  • 1/4 cup cilantro, chopped
  • Salt to taste

Instructions

  1. Heat a grill or broiler to high heat. Place the red bell peppers, jalapeno peppers, and poblano peppers on the grill or under the broiler until charred and blistered, turning occasionally. Remove from heat and let cool.

  2. Once cooled, remove the skins and seeds from the peppers and dice them.

  3. In a bowl, combine the diced peppers, minced chipotle pepper, red onion, garlic, lime juice, cilantro, and salt. Mix well to combine.

  4. Allow the salsa to sit for at least 15 minutes before serving to allow the flavors to meld together.

  5. Serve with tortilla chips or as a topping for tacos, grilled meats, or vegetables.
