How To Make Halloumi with Chickpea Salsa & Couscous

Ingredients
- 8 slices of halloumi cheese
- 1 cup of couscous
- 1 cup of vegetable broth
- 1 can of chickpeas, rinsed and drained
- 1 red bell pepper, diced
- 1/2 red onion, finely chopped
- 1/4 cup of chopped fresh parsley
- 2 tablespoons of olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Preheat your grill or grill pan over medium heat.

In a bowl, combine the chickpeas, red bell pepper, red onion, parsley, olive oil, lemon juice, salt, and pepper. Mix well to combine and set aside.

In a separate bowl, pour the vegetable broth over the couscous and let it sit for 5 minutes, or until the liquid is absorbed. Fluff the couscous with a fork and set aside.

Grill the halloumi cheese slices for about 2-3 minutes on each side, or until golden brown grill marks appear.

To serve, divide the couscous among four plates. Top with the grilled halloumi slices and spoon the chickpea salsa over the top.

Garnish with additional parsley if desired and serve immediately.
