How To Make Roasted Garlic and Tomato Sauce

A rich and flavorful tomato sauce featuring tender roasted garlic.

Serves:

Ingredients

  • 1 head of garlic
  • 1 tbsp olive oil
  • 6 large tomatoes, cored and chopped
  • 1 tbsp tomato paste
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 1 tbsp fresh basil leaves, chopped

Instructions

  1. Preheat oven to 400°F.

  2. Cut off the top of the garlic head so the cloves are exposed. Drizzle with olive oil and wrap in foil. Place on a baking sheet and roast for 30-40 minutes, until garlic is soft and fragrant.

  3. In a large saucepan, combine chopped tomatoes, tomato paste, salt, black pepper, and red pepper flakes. Bring to a simmer and cook for 30-40 minutes, stirring occasionally, until tomatoes have broken down and sauce has thickened.

  4. Squeeze roasted garlic cloves out of their skins and add to the tomato sauce. Stir to combine and cook for an additional 5-10 minutes.

  5. Stir in chopped basil leaves and adjust seasoning to taste.

  6. Serve over pasta or use as a marinara sauce.
