How To Make Harissa Couscous Salad

A spicy, tangy and wholesome salad to tantalize your taste buds.

Serves:

Ingredients

  • 1 cup couscous
  • 1 ½ cups boiling water
  • 1 tbsp harissa paste
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 can of chickpeas, drained
  • 1 small red onion, finely chopped
  • ¼. Cover and let it sit for 10 minutes.

  • After 10 minutes, fluff couscous with a fork and add harissa paste to it. Stir well to combine.

  • In a large bowl, combine couscous, bell peppers, chickpeas, onion, mint leaves, and parsley leaves.

  • In a small bowl, whisk together olive oil, lemon juice, and salt.

  • Pour dressing over the salad and toss well to coat.

  • Serve chilled.
