How To Make Harissa Roasted Tomatoes with Couscous

Ingredients
- 4 large tomatoes
- 2 tablespoons harissa paste
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 cup couscous
- 1 cup boiling water
- Handful of fresh cilantro, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet.

In a small bowl, mix together the harissa paste, olive oil, salt, and cumin.

Spoon the harissa mixture over the tomatoes, making sure they are well coated.

Roast the tomatoes in the preheated oven for about 20-25 minutes, until they are slightly charred and softened.

While the tomatoes are roasting, prepare the couscous. Place the couscous in a medium-sized bowl and pour the boiling water over it. Cover the bowl with a plate or cling wrap and let it sit for 5 minutes.

Fluff the couscous with a fork and divide it among serving plates.

Remove the roasted tomatoes from the oven and place them on top of the couscous.

Garnish with fresh cilantro and serve hot.
