How To Make Harissa Veg, Goat’s Cheese & Couscous Salad

Ingredients
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- salt and pepper, to taste
- 1 cup couscous
- 1 1/2 cups vegetable broth
- 2 tbsp harissa paste
- 1 tbsp lemon juice
- 4 cups mixed salad greens
- 4 oz goat’s cheese, crumbled
- 1/4 cup chopped fresh parsley
Instructions

Preheat the oven to 400°F (200°C). In a large baking tray, toss the bell peppers, zucchini, and red onion with olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly charred.

In the meantime, cook the couscous. In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pan, and remove it from heat. Let it sit for 5 minutes, then fluff with a fork.

In a small bowl, whisk together the harissa paste and lemon juice to make the dressing. Set aside.

In a large salad bowl, combine the roasted veggies, cooked couscous, mixed salad greens, goat’s cheese, and chopped parsley. Drizzle the harissa dressing over the salad and toss well to combine.

Serve the salad chilled or at room temperature.
