Serves:

Ingredients

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • salt and pepper, to taste
  • 1 cup couscous
  • 1 1/2 cups vegetable broth
  • 2 tbsp harissa paste
  • 1 tbsp lemon juice
  • 4 cups mixed salad greens
  • 4 oz goat’s cheese, crumbled
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C). In a large baking tray, toss the bell peppers, zucchini, and red onion with olive oil, salt, and pepper. Roast for 20-25 minutes until tender and lightly charred.

  2. In the meantime, cook the couscous. In a saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pan, and remove it from heat. Let it sit for 5 minutes, then fluff with a fork.

  3. In a small bowl, whisk together the harissa paste and lemon juice to make the dressing. Set aside.

  5. Serve the salad chilled or at room temperature.
