How To Make Harissa Couscous

Serves:

Ingredients

  • 2 cups couscous
  • 2 cups vegetable broth
  • 2 tbsp harissa paste
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 zucchini, diced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large bowl, combine couscous and vegetable broth. Cover and let it sit for 5 minutes until couscous absorbs the broth.

  2. In a separate pan, heat olive oil over medium heat. Add garlic and sliced red onion, sauté until onion becomes translucent.

  3. Add diced bell peppers and zucchini to the pan. Cook for 5 minutes until vegetables are slightly softened.

  4. Stir in harissa paste and season with salt and pepper. Cook for another 2 minutes to allow flavors to meld.

  5. Fluff the couscous with a fork and transfer it to the pan with the vegetables. Mix well until everything is evenly combined.

  6. Cook for another 2-3 minutes, stirring occasionally.

  7. Remove from heat and garnish with fresh parsley.

  8. Serve hot and enjoy!
