How To Make Harissa Couscous

Ingredients
- 2 cups couscous
- 2 cups vegetable broth
- 2 tbsp harissa paste
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 zucchini, diced
- 1 red onion, sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large bowl, combine couscous and vegetable broth. Cover and let it sit for 5 minutes until couscous absorbs the broth.

In a separate pan, heat olive oil over medium heat. Add garlic and sliced red onion, sauté until onion becomes translucent.

Add diced bell peppers and zucchini to the pan. Cook for 5 minutes until vegetables are slightly softened.

Stir in harissa paste and season with salt and pepper. Cook for another 2 minutes to allow flavors to meld.

Fluff the couscous with a fork and transfer it to the pan with the vegetables. Mix well until everything is evenly combined.

Cook for another 2-3 minutes, stirring occasionally.

Remove from heat and garnish with fresh parsley.
