Ingredients

  • 2 cups cooked pinto beans
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup vegetable broth

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion, minced garlic, and diced jalapeno pepper. Cook until the vegetables are softened, about 5 minutes.

  2. Add the cooked pinto beans to the skillet and mash them with a potato masher or fork until desired consistency is reached.

  3. Stir in the cumin, chili powder, salt, and black pepper. Cook for an additional 2 minutes.

  4. Pour in the vegetable broth and stir well. Reduce the heat to low and simmer for 30 minutes, stirring occasionally to prevent sticking.

  5. Serve the refried beans hot as a side dish or as a filling for tacos, burritos, or enchiladas.
