Ingredients

  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1/4 cup vegetable oil
  • 1/4 cup finely chopped onion
  • 1 garlic clove, minced
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water
  • 1/4 cup shredded cheddar cheese
  • Tortilla chips, for serving

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat.

  2. Add the onion and cook until tender, about 5 minutes.

  3. Add garlic, cumin, salt, and pepper, and cook for another minute.

  4. Add the beans and water, and cook until heated through, about 10 minutes, stirring occasionally.

  5. Mash the beans using a potato masher or a fork until they are a smooth consistency.

  6. Add the shredded cheese and stir until melted and combined.

  7. Serve with tortilla chips and enjoy!
