How To Make Refried Bean Quesadillas

Ingredients

  • 1 can of refried beans
  • 1 cup of shredded cheese (such as cheddar or Monterey Jack)
  • 4 flour tortillas
  • 1/2 cup of diced tomatoes
  • 1/4 cup of chopped fresh cilantro
  • 1/4 cup of diced red onion
  • Optional toppings: sour cream, guacamole, salsa

Instructions

  1. Preheat a large skillet over medium heat.

  2. Warm the refried beans in a separate saucepan over low heat.

  3. Place a tortilla in the skillet and sprinkle with a quarter of the shredded cheese.

  4. Spread a quarter of the refried beans onto one half of the tortilla.

  5. Fold the tortilla in half and cook until the cheese is melted and the tortilla is crispy, about 2-3 minutes per side.

  6. Repeat with the remaining tortillas and ingredients.

  7. Serve the quesadillas hot, topped with diced tomatoes, chopped cilantro, diced red onion, and any desired toppings.
