Ingredients

  • 1 lb. medium shrimp, peeled and deveined
  • 1 cup unsweetened coconut flakes
  • 1/2 cup almond flour
  • 2 tsp. salt
  • 1 tsp. black pepper
  • 2 eggs, beaten

Instructions

  1. In a shallow dish, mix together almond flour, coconut flakes, salt, and black pepper.

  2. Dip each shrimp in the beaten eggs, then coat in the almond flour mixture.

  3. Preheat your air fryer to 400°F.

  4. Spray the basket with non-stick cooking spray and place the coated shrimp inside.

  5. Cook for 5 minutes on one side, then flip the shrimp and cook for another 5 minutes or until golden brown.
