  • 1 gluten-free pie crust
  • 1 cup pecan halves
  • 3/4 cup brown sugar
  • 3/4 cup corn syrup
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 2 eggs

Instructions

  1. Preheat oven to 350°F.
  2. In a mixing bowl, beat the eggs and set aside.
  3. In a small saucepan, heat the brown sugar, corn syrup, butter, and salt on medium heat.
  4. Once the mixture starts to boil, stir in the vanilla extract.
  5. Slowly pour the mixture into the beaten eggs, whisking continuously.
  6. Arrange the pecan halves on the bottom of the pie crust.
  7. Pour the filling on top of the pecans.
  8. Bake the pie for 45 minutes or until the filling is set.
  9. Let it cool and serve.
