How To Make Chi-Chi’s Quesadillas Recipe

This recipe is the perfect balance of cheese, chicken, and veggies stuffed in a crispy tortilla.

Ingredients

  • 4 large flour tortillas
  • 2 cups shredded cooked chicken
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a skillet over medium heat.

  3. Add peppers and onions and sauté for 5-7 minutes until softened.

  4. Add chicken and cilantro to the skillet and stir.

  5. Place tortillas on a baking sheet and fill with the chicken and veggie mixture.

  6. Top each tortilla with shredded cheddar cheese.

  7. Fold the tortillas in half and bake for 10-12 minutes until the cheese is melted and the tortillas are crispy.

  8. Cut the quesadillas into wedges and serve hot.
