How To Make Chi-Chi’s Quesadillas Recipe
This recipe is the perfect balance of cheese, chicken, and veggies stuffed in a crispy tortilla.

Ingredients
- 4 large flour tortillas
- 2 cups shredded cooked chicken
- 1 red pepper, chopped
- 1 green pepper, chopped
- 1 onion, chopped
- 1 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
Instructions

Preheat oven to 375°F.

Heat olive oil in a skillet over medium heat.

Add peppers and onions and sauté for 5-7 minutes until softened.

Add chicken and cilantro to the skillet and stir.

Place tortillas on a baking sheet and fill with the chicken and veggie mixture.

Top each tortilla with shredded cheddar cheese.

Fold the tortillas in half and bake for 10-12 minutes until the cheese is melted and the tortillas are crispy.
