How To Make Mini Summer Puddings

- 4 slices of white bread, crusts removed
- 1 cup of mixed summer berries (strawberries, raspberries, blueberries)
- 1/4 cup of sugar
- 1 cup of heavy cream
- 1 tsp of vanilla extract
Instructions

In a saucepan, combine the mixed summer berries and sugar. Cook over medium heat for 5 minutes, stirring occasionally, until the berries release their juices. Remove from heat and let cool.

Meanwhile, take the slices of bread and cut them into circles to fit the bottom of 4 individual serving glasses.

Once the berry mixture has cooled, spoon a layer of it onto each bread circle in the glasses.

In a separate bowl, whip the heavy cream and vanilla extract until soft peaks form.
