How To Make Easter Leftover Vegetable and Ham Soup

This comforting soup is the perfect way to use up Easter leftovers!

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken or ham broth
  • 2 cups diced cooked ham
  • 2 cups chopped cooked vegetables (carrots, green beans, peas, etc.)
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.

  2. Add onion and garlic and sauté until soft.

  3. Add broth, ham, vegetables, thyme, salt, and pepper.

  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.

  5. Serve hot with crusty bread.
