Ingredients

  • 1 leftover ham bone
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves of garlic, minced
  • 6 cups of chicken or vegetable broth
  • 1 bay leaf
  • 1 teaspoon of dried thyme
  • Salt and pepper to taste
  • 1 cup of cooked ham, chopped
  • 1 cup of frozen peas

Instructions

  1. In a large pot, add the ham bone, onion, carrots, celery, and garlic.

  2. Pour in the chicken or vegetable broth and add the bay leaf and dried thyme.

  3. Season with salt and pepper to taste.

  4. Bring the soup to a boil, then reduce the heat to low and simmer for 1.5 to 2 hours, until the meat is tender and falling off the bone.

  5. Remove the ham bone from the pot and set aside to cool.

  6. Once the bone is cool enough to handle, remove any remaining meat and return it to the pot.

  7. Stir in the chopped cooked ham and frozen peas, and cook for an additional 10 minutes until the peas are heated through.

  8. Remove the bay leaf before serving.

  9. Serve the ham bone soup hot and enjoy!
