Serves:
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 1/4 cup shredded coconut
- 1/4 cup mini chocolate eggs
- Green food coloring
- 1/2 cup powdered sugar
- 1 tablespoon milk
Instructions
-
Preheat oven to 350°F (175°C). Grease a round cake pan.
-
In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
-
In a separate bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
-
Gradually add the dry ingredients to the butter mixture, alternating with buttermilk. Mix until just combined.
-
Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool completely.
-
In a small bowl, mix shredded coconut with a few drops of green food coloring until desired color is achieved.
-
Once the cake is cooled, spread the coconut mixture on top of the cake to resemble a nest. Press mini chocolate eggs into the coconut.
-
In another small bowl, whisk together powdered sugar and milk to make a glaze. Drizzle the glaze over the cake.
-
Serve and enjoy!
