How To Make Lemon Blueberry Easter Cookies Recipe
Lovely Easter cookies with a lemony tang and juicy blueberries.
Serves:
Ingredients
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 tablespoon lemon zest
- 2 tablespoons lemon juice
- 1 and 1/2 cups all-purpose flour
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup blueberries, fresh or frozen
Instructions

Preheat oven to 375°F and line baking sheets with parchment paper.

Using an electric mixer, cream together the butter and sugar until light and fluffy.

Mix in the egg, vanilla, lemon zest, and lemon juice.

In another bowl, whisk together the flour, baking powder, and salt.

Gradually add the dry ingredients to the wet ingredients and mix until well combined.

Fold in the blueberries.

Use a cookie scoop or tablespoon to drop dough onto prepared baking sheets, spacing them about 2 inches apart.
