Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tbsp lemon zest
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350°F and grease a 9×5 inch loaf pan.

  2. In a medium-sized bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In a large bowl, cream together butter and sugar until light and fluffy.

  4. Beat in eggs, one at a time, then stir in lemon zest and lemon juice.

  5. Add dry ingredients to wet ingredients in three parts, alternating with buttermilk and ending with dry ingredients.

  6. Pour batter into prepared loaf pan and smooth the top.

  7. Bake for 45-50 minutes or until a toothpick inserted into the center of the cake comes out clean.

  8. Let cool for 10 minutes before removing from pan.

  9. Serve sliced and enjoy!
