A delicious and moist lemon pound cake made in a crockpot.

Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1/4 cup lemon juice
- 1/2 cup milk
Instructions

Grease a 6-quart crockpot with cooking spray.

In a bowl, whisk together flour, baking soda, and salt.

In another bowl, beat butter and sugar until light and fluffy.

Add eggs one at a time, mixing well after each addition.

Add lemon juice and mix until combined.

Add flour mixture and milk alternately, starting and ending with flour mixture, and mix until just combined.

Pour batter into crockpot and cook on high for 4 hours or until a toothpick inserted in the center comes out clean.

Turn off crockpot and let cake cool in the crockpot for 10 minutes.

Remove cake from crockpot and transfer to a wire rack to cool completely.
