Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Cooking spray

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, sugar, and cinnamon.

  2. In another bowl, whisk together milk, egg, melted butter, and vanilla extract.

  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter rest for 5 minutes.

  4. Preheat a non-stick skillet or griddle on medium heat. Coat with cooking spray.

  5. Use a 1/4 cup measuring cup to scoop the batter and pour onto the skillet. Cook until bubbles form on top and the edges start to dry, then flip and cook for an additional minute on the other side.

  6. Repeat with remaining batter.

  7. Serve with your choice of toppings such as fresh berries, whipped cream, or syrup.
