  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, melted and cooled
  • 1/4 cup milk
  • 1 egg
  • 1/2 cup dried cranberries
  • 1/2 cup shelled pistachios

Instructions

  1. Preheat the oven to 350°F. Grease a 9-inch loaf pan.

  2. In a bowl, whisk together the flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together the melted butter, milk, and egg.

  4. Add the wet ingredients to the dry ingredients and stir until just combined.

  5. Fold in the cranberries and pistachios.

  6. Pour the batter into the prepared loaf pan and bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.

  7. Let the bread cool in the pan for 10 minutes before removing and slicing.
