Ingredients

  • 1 lb sausage, casings removed and crumbled
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook sausage over medium heat until browned. Remove sausage from pot and set aside.

  2. In the same pot, add onion, carrots, and celery. Cook until vegetables are softened, about 5 minutes.

  3. Add garlic to the pot and cook for an additional minute.

  4. Return sausage to the pot and add white beans, chicken broth, dried thyme, bay leaf, salt, and pepper.

  5. Bring soup to a boil and then reduce heat to low. Simmer for 30 minutes.

  6. Remove bay leaf before serving.
