Ingredients

  • 2 medium-sized sweet potatoes, peeled and cubed
  • 1 lb smoked sausage, sliced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • salt and black pepper to taste
  • fresh parsley, chopped (optional)

Instructions

  1. Heat a large skillet over medium-high heat. Add olive oil and sweet potatoes.

  2. Cook for 10-12 minutes or until potatoes become tender and slightly browned.

  3. Add smoked sausage, red bell pepper, onion, garlic, paprika, salt, and black pepper.

  4. Saute everything together for another 8-10 minutes.

  5. Garnish with fresh parsley, if desired.
