How To Make Sausage Hash Recipe
A hearty breakfast skillet made with crispy potatoes, savory sausage, and eggs.
Serves:
Ingredients
- 1 lb breakfast sausage
- 4 medium potatoes, peeled and diced
- 1 onion, diced
- 1 red bell pepper, diced
- 4 cloves garlic, minced
- 2 tsp smoked paprika
- 1 tsp dried thyme
- Salt and pepper, to taste
- 4 eggs
- 1/4 cup chopped fresh parsley
Instructions

In a large skillet, cook the sausage over medium-high heat until browned and crispy. Remove from skillet and set aside.

Add the diced potatoes to the skillet and cook until crispy and browned, stirring occasionally.

Add the onion, bell pepper, garlic, smoked paprika, thyme, salt, and pepper to the skillet and stir to combine. Cook until the vegetables are tender.

Add the cooked sausage back to the skillet and stir to combine.

Create 4 wells in the sausage and potato mixture and crack an egg into each well.

Cover the skillet and cook until the egg whites are set but the yolks are still runny, about 5-10 minutes.

Sprinkle with chopped parsley before serving.
