How To Make Pastrami & Sweet Potato Hash

Ingredients
- 4 cups sweet potatoes, peeled and diced
- 1 onion, diced
- 1 bell pepper, diced
- 8 oz pastrami, sliced
- 2 cloves garlic, minced
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt and pepper to taste
- 4 eggs
- Fresh parsley for garnish
Instructions

Heat a large skillet over medium heat and add the pastrami. Cook until crispy and remove from the skillet.

In the same skillet, add the diced sweet potatoes and cook for about 10 minutes until they start to soften.

Add the onion, bell pepper, garlic, smoked paprika, dried thyme, salt, and pepper to the skillet. Cook for another 5 minutes until the vegetables are tender.

Return the cooked pastrami to the skillet and mix well with the vegetables.

Make 4 small wells in the hash and crack an egg into each well. Season the eggs with salt and pepper.

Cover the skillet and cook for about 5-7 minutes until the eggs are cooked to your liking.
