Ingredients

  • 1 pound ground sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bunch kale, chopped
  • 4 cups chicken broth
  • 1 can cannellini beans, drained and rinsed
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Heat a large pot over medium-high heat and add the ground sausage, onion, and garlic. Cook until the sausage is browned and the onion is soft, about 7-10 minutes.

  2. Add the chopped kale and stir until it wilts, about 3-5 minutes.

  3. Pour in the chicken broth and add the cannellini beans, oregano, thyme, salt, and pepper.

  4. Bring the soup to a simmer and let cook for about 15-20 minutes, until the kale is tender and the flavors have melded together.

  5. Serve hot and enjoy!
