How To Make Chicken Sausage and Kale Soup

Ingredients

  • 4 chicken sausage links, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 bunch kale, chopped
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste

Instructions

  1. In a large soup pot, cook the sliced chicken sausage over medium heat until browned. Remove from pot and set aside.

  2. In the same pot, sauté the diced onion and minced garlic until the onion is translucent.

  3. Add the chicken broth, chopped kale, diced tomatoes, dried thyme, red pepper flakes, and browned sausage back into the pot.

  4. Bring the soup to a simmer and cook for 20 minutes.

  5. Season soup with salt and pepper to taste.
