How To Make Andouille Sausage and Kale Soup Recipe

Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 Andouille sausage, sliced
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp cumin
  • 2 cups chopped kale
  • Salt and pepper to taste

Instructions

  1. Heat oil in a soup pot over medium heat.

  2. Add onion and garlic and sauté until soft and fragrant.

  3. Add sausage and cook until browned.

  4. Pour in chicken broth and tomatoes, then stir in thyme and cumin.

  5. Simmer for 10 minutes.

  6. Add kale and season with salt and pepper.

  7. Simmer until kale has wilted and soup is heated through.

  8. Serve hot.
