- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper to taste
- 4 cups chopped kale
- Grated Parmesan cheese for serving

In a large pot, cook the Italian sausage over medium heat, breaking it up into crumbles with a spoon, until browned and cooked through. Remove the sausage from the pot and set aside.

In the same pot, sauté the diced onion for 5 minutes until softened. Add the minced garlic and sauté for an additional minute.

Return the cooked sausage to the pot and add the chicken broth, diced tomatoes, oregano, basil, thyme, red pepper flakes (if using), salt, and pepper. Stir to combine.

Bring the soup to a boil, then reduce the heat and let it simmer for 15 minutes to allow the flavors to meld together.
