How To Make Andouille Sausage and Red Beans Recipe
A classic Cajun dish made with spicy andouille sausage and flavorful red beans.

Ingredients
- 1 lb andouille sausage, sliced
- 1 red onion, chopped
- 2 celery stalks, chopped
- 1 green bell pepper, chopped
- 3 garlic cloves, minced
- 2 cans red beans, drained and rinsed
- 1 cup chicken broth
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Cooked rice, for serving
Instructions

In a large Dutch oven or pot, cook the sliced andouille sausage over medium-high heat until browned on both sides, about 5 minutes. Remove the sausage from the pot and set aside.

In the same pot, add the chopped onion, celery, and green bell pepper. Cook for 5-7 minutes until the onions are translucent.

Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

Add the cooked sausage back into the pot along with the drained and rinsed red beans, chicken broth, bay leaf, dried thyme, smoked paprika, salt, and pepper.

Bring the mixture to a boil, then reduce heat to low and simmer for 1 hour, stirring occasionally.

Serve the andouille sausage and red beans over cooked rice.
